It is an unfortunate fact that many Italian restaurants cover up the delicate flavor of veal by breading it, deep-frying it, or smothering it with a heavy sauce. Luckily, there are several Italian dishes with ingredients that merely complement veal, rather than overwhelm it. Your options include:
Piccata
The sauce that enrobes the veal in this classic dish is light, crisp, and acidic – exactly what the meat needs to let its flavor shine. Lemon juice and white wine are mixed into melted butter and finished off with spices and tangy capers. It is then poured over quickly-sautéed cuts of tender veal for a dish that is as refreshing as it is delicious.
Marsala
Veal Marsala is one of the world’s most popular Italian dishes, and is the perfect sauce for any type of delicate- or mild-flavored meat. It starts with sliced fresh mushrooms, sautéed in olive oil with onions and garlic. Then the vegetables are simmered in a rich sauce of fruity Marsala wine and rich beef broth and served over veal. The acidity of the wine and the rich beef taste from the broth complement the meat perfectly.
Cacciatore
This dish originally used chicken, until creative chefs realized that it made for an equally tasty sauce over veal. Choice veal cutlets are beautifully sautéed with sliced mushrooms, sweet red peppers, and tangy Kalamata olives. The ingredients are then allowed to simmer in a light sauce of crisp white wine, garlic, and marinara sauce before pouring over pasta.
Mimosa
There’s neither champagne nor orange juice in this dish, but there is plenty of flavor to go around! Savory sautéed veal is accompanied by bitter broccoli rabe, meaty Portobello mushrooms, and sweet roasted red peppers in a light sauce of garlic and white wine. Then dish is then finished off with sharp Provolone cheese for an extra bite.
You’ll find all of these veal specialties and more on the menu at Piccolo Trattoria. We use traditional Italian cooking methods that honor the flavor of the ingredients, rather than mask them. Gluten is a protein found in grain that many people cannot digest, often forcing them to give up their favorite foods. Luckily, several samples of Italian cuisine still offer plenty of choices for gluten-free diners without sacrificing the slightest bit of flavor. Read on for four examples of gluten-free Italian food:
Gluten-Free Pizza Crust
Not all flours are the same. Flour milled from wheat may be gluten-heavy, but when made from other grains, like milled rice, the gluten content is kept to a minimum. Many Italian restaurants now offer gluten-free pizza crust to ensure that they can serve everyone who loves Italian food, not just those without allergies. Gluten-free crust comes out crispy, but still with a delightfully chewy texture.
Gluten-Free Sauces
Many restaurants use a flour paste called roux to thicken sauces and keep them from looking like soup on a plate. However, there are many alternatives to roux that can give sauces the same creamy texture, such as adding butter or pureed vegetables, or just boiling the sauce until it reduces. Ask your favorite Italian restaurant what they use to thicken their sauces; most will be happy to accommodate your gluten-free diet.
Gluten-Free Pasta
Gluten-free pasta is actually preferred by many over traditional pasta. Depending on the grain that its flour was milled from, gluten-free pasta is chewy, dense, and tender. Many Italian restaurants will allow you to substitute traditional pasta for gluten-free noodles or sometimes even vegetables.
Piccolo Trattoria is dedicated to accommodating as many special dietary needs as possible, to ensure that everyone can enjoy the succulent Italian dishes that our menu has to offer. We offer a variety of gluten-free dishes and substitutions in a casual environment, and are more than happy to help you find a dish that suits your diet. Call us at (215) 860-4247 if you have any questions about our menu options.

Boxed pasta is one of the world’s easiest and quickest dinners, requiring only a quick soak in boiling water to prepare. The process of creating the pasta before it is placed in the box, on the other hand, is much more time consuming.
This video demonstrates how pasta is made in a factory. You can see the entire process of the pasta, from its beginning as a massive load of flour to its final stage as dried noodles.
We feature all types of pasta here at Piccolo Trattoria. Whether you like traditional, whole wheat, or gluten-free, we have a flavor and shape for everyone! Visit our website or call (215) 860-4247 to learn more about what we offer.
